Vegan, nut-free, soy-free, gluten-free (minus the croutons)

Welcome to the season of chilled soups! This refreshing cold soup is full of flavourful juicy tomatoes, peppers and crunchy cucumber. My take on this Andalusian treasure is blended to make a creamy thick broth and then texturized with mini chunks of all the beautiful fresh ingredients. It has a bit of jalapeno for some subtle heat and is finished with a hint of lime and fresh herbs. It comes with my crunchy homemade focaccia croutons on the side. They are the perfect topper to soak up the yummy soup if they last that long!

 

Ingredients: Fresh tomatoes, cucumber, bell peppers, cubanelle peppers (mild green), onion, garlic, rose vinegar, white wine vinegar, olive oil, cumin, jalapeno, basil, cilantro, lime, sea salt & pepper

Topper: homemade focaccia croutons with a hint of garlic and rosemary
